Feliz Siete de Mayo!!!


For those of you who work a 9-5 job like me and can't exactly celebrate Cinco de Mayo ON the actual day (when it happens to fall on a weekday), here's what you're having for dinner tonight.

3 med chicken breasts, cooked and shredded

shredded cheddar cheese

1 med onion, chopped

1 garlic clove, minced

1 sm can of green chiles

3 tsp ground cumin

1 tsp chili powder

1/4-1/2 tsp ground cayenne pepper (optional)

1 tsp dried cilantro

1/2 tsp black pepper

1/2 tsp salt

your choice of oil

10-12 8 inch flour tortillas

Saute onions, garlic, and chiles in oil until tender and translucent. Mix spices with chicken and then fold in onion mixture. Fill tortillas with chicken mixture and shredded cheese (TIP: microwave tortilla for 15-20 seconds for easier wrapping). Deep fry chimis until golden brown. Garnish with lettuce, tomato, onion, cilantro, and sour cream (and a margarita, or two).
