My Bolognese Sauce

Ingredients:
2-3 Tbs Extra Virgin Olive Oil
1 med onion, chopped
4 cloves garlic, pressed or minced
1 lb ground chuck
1 lb breakfast sausage
1/4 cup dry red wine
1 28 oz can crushed tomatoes
1 8 oz can tomato sauce
1/2 tsp each:
Thyme
Rosemary
Marjoram
Red Pepper Flakes
2 tsp each:
Basil
Oregano
1 Bay leaf
1 cup chicken stock
1/2 cup Parmesan cheese

Heat the olive oil in a skillet over medium heat until you see it rippling.  Then add the onion and saute until translucent.  Add the garlic and cook for about another minute until you can smell all of it's garlicky goodness.  Add your ground chuck and breakfast sausage and cook the mixture until it's just browned.  Drain most of the fat and cook over medium heat until the meat mixture just starts to stick to the bottom of the pan.  Then...here comes the magic. De-glaze the pan with the red wine and stir up all those delicious brown bits!  That's allll flavor...mmmmm.  Once all the wine is reduced, remove the pan from the heat and set it aside.  In a large sauce pan, add the rest of the ingredients except the Parmesan.  I didn't really measure the spices, I just added the measurements here so you have an idea of how much to add.  It's really your preference.  Hey, you don't like basil?  Leave it out. It's your sauce!  Wear what you dig!  Bring the sauce to a slow boil and then reduce the heat and simmer for about 30 minutes or to where you're happy with the consistency.  At the very end, add your meat mixture and stir in the Parm and voila!  Add some pasta and you have yourself a home cooked Italian meal!  Enjoy!
