For a long time now I've been developing a passion for photography. I don't own a fancy camera nor do I plan on buying one. All of these photos were taken with a cell phone camera of some type. Some of them edited on Instagram and some with my phone. I don't claim to be the latest and greatest. I still have a lot to learn. Ham Fried Rice
This is a great recipe for leftover ham and it's really easy. When I asked my husband if it tastes like the fried rice he gets at the take-out place he said, "It's good. It actually tastes fresher." I always try to get all my ingredients out ahead of time and chop all my veggies first. It made about 4 healthy servings and I put each serving in individual containers for him to take to the office with him for lunch. I froze two of those but I'm not sure if this freezes well. I'll be sure to update once I find out. Hope you enjoy!
Ingredients:
3-4 Tbs EVOO or sesame oil
1-1.5 cups ham, cubed
1/2 a white or yellow onion, chopped
5-6 baby carrots, chopped
Rice Wine Vinegar (or substitute gin or dry sherry or white wine)
1/2 cup frozen peas
3 eggs, beaten
2 cups cooked rice (preferably not instant but that's all I had on hand)
2-3 Tbs soy sauce (more or less to taste)
2-3 green onions, chopped
Try to chop your ingredients approximately the same size so that it all cooks evenly.
Heat the oil in a large skillet on med-high heat until it's hot and rippling.
Add the onions and carrots and saute until they are soft.
Make sure you salt & pepper lightly at each step and taste your food!!

Add the frozen peas and heat until thawed.
Next, stir in the cooked ham and heat until warmed through.
Deglaze the pan with gin (or sherry or wine)
and be sure to stir it for about a minute to cook off the alcohol.

Push all ingredients to the side and pour in the beaten eggs.
Scramble the eggs well and then combine them with the rest of the ingredients in the pan.

Apple Bourbon Glazed Pork Chops & Garlicky Parm Mashed Potatoes
This one was a hit with the whole family! Even the kids!
Here's what you'll need:
3 or 4 pork chops (preferably thick cut but any cut will work, just adjust your cooking times)
A large cast iron grill pan if you're not cooking them on the grill outside
Grilling is my preferred method, but at the last minute I discovered our Traeger grill was out of pellets and the Hubs wasn't home to mess with it. By the way, I highly recommend the Traeger wood pellet grill. If you're not familiar, you should be. Check 'em out here.
Salt and pepper the chops and sprinkle with as much garlic powder as you like. It's probably best to use granulated garlic which is less likely to burn and get bitter but I didn't have any on hand. I also use kosher salt and fresh ground pepper. It's worth it for the taste and plus you get to feel like a real chef (haha). Set the chops aside and let them get to room temp. Now it's time to get your glaze started.
Glaze Ingredients:
1/2 cup applesauce
2 tsp apple cider vinegar
3 Tbsp brown sugar
2-3 Tbsp of your favorite bourbon whiskey, depending on your taste
1/2 tsp ground mustard
1.2 tsp salt
a good pinch of red pepper flakes
Combine all ingredients in a small sauce pan. I also poured in a dash (or three) of Woodchuck Summer Time Cider. Mainly because it was in my hand and it sounded like a good idea. Heat to medium high and then reduce and simmer, stirring and letting it reduce while you get your chops cooking.
Here's how I cooked my chops:
Since I wasn't able to use the grill, I preheated the oven to 350 and also brought my cast iron grill pan up to medium high on the stove top. I seared the chops for a minute or two on each side, just until I had some nice brown grill marks. My pan wasn't big enough for all three chops, so I put my biggest stainless pan in he oven and tossed in 3 Tbsp of butter while the oven was preheating. Once the oven was up to temp, I put my seared chops in the big pan and finished cooking them all the way through. After about 4 minutes, I started brushing them with the glaze, flipping after another few minutes and glazing them on the other side until they were fully cooked and most of the glaze was used up. If you're grilling, obviously you can skip all these steps and just start the glaze after the first flip. The butter can probably be added to the glaze or you could also melt some butter separately and drizzle the chops with it as they cook. Don't be afraid to experiment with different methods!
Onto to the side! I thought these Garlicky Parm Mashed Potatoes went great with this dish.
Peel and chop 3 large russet potatoes. Add to cold, salted water, and bring to a boil. Boil until you're able to mash one of the cubes with a fork up against the side of the pan. In the mean time, in a small pan melt two Tbs butter. Crush or finely chop 2-3 garlic cloves. On medium heat, saute the garlic until you can smell it - about a minute or so. Don't burn it or it will be bitter and ruin your taters!!
Once the potatoes are done, drain them in a colander and add them back to the hot pan so the rest of the moisture can evaporate. Mash, then add half a stick of butter, the sauted garlic, 1/4 cup of grated Parmesan cheese, and a heaping Tbs of sour cream for some tang. Then just add as much milk as you want to your desired consistency. I like to leave mine lumpy. Partly because I like them that way, but mainly because it drives my husband nuts. ;)

1 med onion, chopped
4 cloves garlic, pressed or minced
1 lb ground chuck
1 lb breakfast sausage
1/4 cup dry red wine
1 28 oz can crushed tomatoes
1 8 oz can tomato sauce
1/2 tsp each:
Thyme
Rosemary
Marjoram
Red Pepper Flakes
2 tsp each:
Basil
Oregano
1 Bay leaf
1 cup chicken stock
1/2 cup Parmesan cheese
Heat the olive oil in a skillet over medium heat until you see it rippling. Then add the onion and saute until translucent. Add the garlic and cook for about another minute until you can smell all of it's garlicky goodness. Add your ground chuck and breakfast sausage and cook the mixture until it's just browned. Drain most of the fat and cook over medium heat until the meat mixture just starts to stick to the bottom of the pan. Then...here comes the magic. De-glaze the pan with the red wine and stir up all those delicious brown bits! That's allll flavor...mmmmm. Once all the wine is reduced, remove the pan from the heat and set it aside. In a large sauce pan, add the rest of the ingredients except the Parmesan. I didn't really measure the spices, I just added the measurements here so you have an idea of how much to add. It's really your preference. Hey, you don't like basil? Leave it out. It's your sauce! Wear what you dig! Bring the sauce to a slow boil and then reduce the heat and simmer for about 30 minutes or to where you're happy with the consistency. At the very end, add your meat mixture and stir in the Parm and voila! Add some pasta and you have yourself a home cooked Italian meal! Enjoy!

Lymphedema Treatment Act
For those of you that don't know, my best friend of 23 years is a Cervical Cancer survivor. She now suffers from Lymphedema as a result of the radiation that was used to save her life. This is when lymphatic fluid pools in certain places in your body and causes severe swelling, pain and infections and in some rare cases even death. It is incurable, but treatable. The only problem is, Medicaid won't pay for the treatment! You can help change that by emailing, facebook messaging, and/or tweeting your state representative.
