My Take on "The Dress"

By now I know you're all annoyed with the social media posts about the dress.  I just want to put in my two cents and then I swear I'll leave it alone.  Here's what I think...



I think "The Dress" teaches us something about our society and the way we see things.

I think we see what we want to see.  We see what our subconscious tells us is true.  It's all about who you are as a person and how you view life and the world around you.

The Optimist knows that there is light, so he adds it back and says the dress is White and Gold.

The Realist sees the colors for what they are in the photo only.  Blue and Brown.  (I know this because that's me.)

The Pessimist sees only the shadow and dismisses the light.  His eyes see only Blue and Black.

Now, here's the kicker...

The Child, who is none of those, can see ALL colors and teaches us a little more about how we should all think.

It all just goes to show that it's all about perspective.  The human brain works in mysterious, wonderful ways.  We should all try to look at things in a different light sometimes.

Crockpot Taco Chili

This is a great throw-together recipe when you're short on time and want a quick, delicious meal to feed the whole family.  I hope you enjoy it!

Ingredients:
1 lb ground beef (I use 80/20)
2 Tbsp olive oil
1 medium onion, chopped (reserve some for garnish as well)
16-20 oz of chicken stock (depending on how thick you want your soup)
1-15 oz can fire roasted diced tomatoes
1-15 oz can of black beans, rinsed
1-15 oz can of corn, drained
1-4 oz can of diced green chiles, drained
2-3 cloves garlic, diced or pressed
1 packet of taco seasoning mix (or use THIS recipe)

Heat the olive oil in a skillet over med-high heat.  Add the chopped onions and saute for a few minutes before adding the ground beef.  Brown the ground beef and drain the excess fat.

While the ground beef is browning, add the remaining ingredients to a crock pot.  Add the meat when brown and cook on high for 4 hours. 

Garnish with your choice of sour cream, shredded cheese, diced onions, or tortilla strips.  Or all of them! Go crazy!

Homemade Taco Seasoning

4 tsp chili powder
6 tsp onion powder
3 tsp ground cumin
3 tsp garlic powder
3 tsp paprika
2 tsp kosher salt
1 tsp ground oregano

2-3 Tbsp is equal to one packet of store bought taco seasoning.  Bonus, no MSG!
